You get up too early (and yet too late, hello snooze button!). You rush getting ready. Rush breakfast (if you even bother). You rush out the door. You bust your butt all day. You try to hit the gym...most of the time...sometimes... You try to have a life - things to do, people to see. It goes on and on. Then you get home and it would be nice to sit down to a nice warm meal and relax but who wants to cook and work and clean and crap.
There's a lot of crockpot recipes out there claiming to be easy. And some are...but some have you cooking meat and chopping a million things and you've been working forever and your kitchen’s a mess before you even put it in the crockpot. What’s the point?!
This recipe actually is super easy! I swear. You open a jar, a bag, a can, a box and throw in some chicken and you’re done. Now don’t go getting down on those jars and stuff I mentioned. I know these days, especially in the food blog realm, it should be all fresh, organic, from scratch, clean eating, whole foods. And I’m all for that, believe me! But real life doesn’t always accommodate that. Sometimes you settle for jarred and canned ingredients. I mean, we can eat better making this chili with stuff from jars than grabbing fast food or something so I’m calling it a win.
I’m calling this 5 ingredient chili because you can definitely get a good flavor from the salsa here but I can’t help but throw in some spices and then of course you have to top it with some goodies so that's more than 5 but the basics are 5 ingredients so I'm going with it. I topped it with greek yogurt and avocado (cutting the avocado was probably the most work I had to put into this but it was worth it). I put greek yogurt on everything but more on that in another blog post to come. This was the first time I tried avocado in chili and I wasn’t sure I was going to like it warmed up in it because I recently tried roasted avocado and I didn’t really care for it but it was great in the chili! I highly recommend it. I also added some shredded Mexican blend cheese one night on my leftovers, very tasty.
5 Ingredient Crockpot Chicken Chili Verde
- 4 chicken breasts
- 1 16 oz jar of salsa verde
- 1 quart of chicken broth
- 1 bag of frozen corn
- 2 cans garbanzo beans
- Open the jar of salsa verde and dump it in the crockpot
- Open the bag of corn and dump it in the crockpot
- Open the box of chicken broth and dump it in the crockpot
- Open the cans of beans, drain and rinse, and….dump them in the crockpot
- Open the package of chicken and toss those in the crock pot too
- Break the 5 ingredient rule and add a couple tablespoons of chili powder and a couple teaspoons of cumin. Salt and pepper to taste.
- Cook on high for 4 hours or low for 8 hours.
- Top with goodies and enjoy!
