Ok, I have a secret to share with you. It's my secret ingredient to make salads amazing. It's going to blow your mind. Are you ready? Spices!
Seriously, why don't you ever see spices on salads?! Sure, they get topped with pepper and you'll see salt or garlic in a dressing recipe occasionally but that's where it ends. It's crazy! It's time for a change, don't you think?
So I love, love, love this salad but I'm not actually a huge fan of cucumbers. If there's cucumbers on my salad I have to cut them up into tiny little bits to mix in a little better instead of those big chunks (which of course cucumbers always are). But something happens when you spiralize the cucumber and it's not as watery or something, I'm not sure exactly, but it's great! And it's so perfectly complimented by the feta and hummus and DILL on this salad, it's sooooo good! So that's it, the secret ingredient: dill on a greek salad. You're welcome.
Spiralized Cucumber Greek Salad w/ Dill
Serves 2 big meal salads or 4 side salads | Prep time: 15 min
- 2 cucumbers - the bigger the better
- 2 teaspoons of dill - dry or fresh
- 1 cup halved grape tomatoes
- 1/3 cup chopped olives - kalamata or queen
- 1/4 of a red onion, chopped
- 4 tablespoons hummus - I recommend roasted red pepper or kalamata olive
- Top with Feta cheese
- Go Crazy: toss a little oregano on there too!
Spiralize the cucumbers and divvy the noodles up between your desired numbers of servings then divvy up all the toppings to your heart’s content and enjoy!
